How to hide vegetables in everyday foods

Zucchini Chocolate Muffins


2 eggs 

3/4 cup of olive oil 

2 cups of plain flour

1 cup of sugar

1 teaspoon of baking powder

1/2 teaspoon of salt

1 teaspoon of ground cinnamon

1/4 teaspoon of ground nutmeg

2 cups of grated zucchini

1/2 cup of semi-sweet chocolate chips

1. Preheat oven to 175 degrees .

2. Grease a 12 cup muffin tin.

3. In a medium bowl, whisk together the eggs and oil.

4. In a separate bowl, mix together the flour, sugar, baking soda, salt, cinnamon, and nutmeg.

5. Add the wet ingredients to the dry ingredients and mix until combined.

6. Fold in the grated zucchini and chocolate chips.

7. Spoon the batter into the muffin tin.

8. Bake for 20-25 minutes, or until a toothpick inserted into the muffin comes out clean.

9. Let cool for about 10 minutes, then enjoy!
